- 2 tbspolive oil
- 2 clovesgarlic
- 250 mlheavy cream
- 100 gParmesan cheese
- 1 handfulfresh parsley
- to tastesalt and pepper
Steps
- 1. Cook the linguine
Boil a large pot of salted water and cook the linguine according to the package instructions until al dente. Drain and set aside, reserving a cup of pasta water for later.
- 2. Prepare the mushrooms
Clean and slice the mushrooms thinly. You can use a mix of mushroom varieties for added flavor and texture.
- 3. Sauté the mushrooms
In a large pan, heat some olive oil over medium-high heat. Add the mushrooms and sauté until they are golden brown and have released their moisture. Season with salt and pepper.
- 4. Make the creamy sauce
Reduce the heat to medium and add minced garlic to the pan with the mushrooms. Cook for about a minute until fragrant. Pour in the heavy cream and bring to a simmer, stirring occasionally.
- 5. Combine pasta and sauce
Add the cooked linguine to the pan with the mushroom sauce. Toss to coat the pasta well. If the sauce is too thick, add a bit of reserved pasta water to reach the desired consistency.
- 6. Finish with cheese and herbs
Stir in grated Parmesan cheese until melted and combined. Add a handful of chopped fresh parsley for brightness. Taste and adjust seasoning if needed.
- 7. Serve
Divide the creamy linguine with mushrooms among serving plates. Garnish with extra Parmesan and parsley if desired. Serve immediately.
