- 200 ggreen or brown lentils
- 2carrots
- 2 stickscelery
- 2large potatoes
- 1.5 Lvegetable broth

Steps
- 1. Prepare the ingredients
Wash and peel the vegetables if needed. Chop onions, carrots, celery, and potatoes into small, even pieces. This ensures they cook evenly.
- 2. Sauté the onions
In a large pot, heat some oil over medium heat. Add the chopped onions and sauté them until they become translucent. This should take about 5 minutes.
- 3. Add the vegetables
Add the chopped carrots, celery, and potatoes to the pot. Stir occasionally and cook for another 5-7 minutes until the vegetables start to soften.
- 4. Add lentils and broth
Rinse the lentils under cold water. Add them to the pot along with the vegetable broth. Stir everything together and bring it to a boil.
- 5. Simmer the soup
Reduce the heat to low and let the soup simmer for about 30 minutes, or until the lentils and vegetables are tender. Stir occasionally to prevent sticking.
- 6. Season the soup
Add salt, pepper, and any other desired seasonings like thyme or bay leaves. Taste and adjust seasoning as needed.
- 7. Serve
Ladle the soup into bowls and serve hot. Optionally, garnish with fresh parsley or a dollop of sour cream.
