Steps
- 1. Sanitize Equipment
Start by sanitizing all equipment that will come into contact with the wine. Use a brewing sanitizer to ensure no bacteria spoil your batch.
- 2. Prepare the Must
Crush the grapes to form the must - the fresh grape juice including skins, seeds, and stems. For a richer flavor, you may choose to ferment with seeds and stems.
- 3. Ferment the Must
Transfer the must into a fermentation vessel. Add wine yeast to the container to initiate fermentation, and cover it with a fitted airlock.
- 4. Monitor Fermentation
Keep the fermenting must in a cool, dark place. Regularly check the specific gravity with a hydrometer to monitor the fermentation progress.
- 5. Rack the Wine
After fermentation, siphon the wine off the sediment into a clean vessel. This process, called racking, should be repeated every few months to clarify the wine.

Store bottled wine on its side in a cool, dark place to age. Most wines benefit from at least a few months of aging, but some might require years to reach their full potential.
